You will notice on the map, the Eastern Europe countries I missed: Belarus, Ukraine, Moldova, Romania and Bulgaria. Romania is the country that piques my interest the most, but I can envision taking a train from Krakow (Poland) to Lviv and Kiev (Ukraine) to Chisinau (Moldova) to Bucharest (Romania) to Sofia (Bulgaria). Krakow, Lviv and Bucharest (+ surrounding towns). Something like this could take three weeks. This section of Europe is steadily becoming more and more popular to travelers. Good value for $$.
